Watermelon Feta Salad Is Bursting With Fresh Flavor

Salty, sweet, and refreshing, watermelon feta salad is a must-eat dish throughout the summer. When you've enjoyed all the fresh watermelon wedges you can, turn the water-rich fruit into a spectacular side dish with feta cheese and an easy dressing. The mint adds brightness, making sure the watermelon's sweetness isn't lost entirely. We also like the raw onion a for a little bite and texture.

Ingredients

  • 1/4 cup extra-virgin olive oil

  • 2 Tbsp. Champagne vinegar

  • 1 Tbsp. fresh lime juice (from 1 large lime) 

  • 1 Tbsp. honey

  • 3/4 tsp. kosher salt, plus more to taste

  • 1/4 tsp. freshly ground black pepper, plus more to taste

  • 2 lb. seedless watermelon (without rind), cut into 1-in. cubes (about 6 cups)

  • 1 cup thinly sliced red onion (from 1 large red onion) 

  • 1 [6-oz.] block Greek feta cheese

  • 1/4 cup fresh mint, roughly chopped (from 1 [1-oz.] pkg.)

Directions

  1. Make dressing:

    Whisk together first six ingredients in a small bowl until well combined.

  2. Toss watermelon and onion in dressing:

    In a large serving bowl, gently toss watermelon, red onion, and olive oil mixture together.

  3. Add cheese and additional toppings:

    Crumble feta cheese over cheese over top.

    Sprinkle with mint. Season with additional salt and pepper to taste. Serve immediately.
