Are dill pickles good in potato salad? We vote a resounding yes! This tangy twist on the classic potato salad recipe will have everyone at the potluck asking "Who made the potato salad?" so they can snag the recipe.

The full list of ingredients for this dill pickle potato salad are below, but here's a brief recap:

  • Potatoes: We suggest Yukon Gold potatoes because their starchy texture allows them to soak up dressing, and they’re sturdy enough to withstand all the mixing required for the perfect potato salad.
  • Pickles: Dill pickles come in lots of varieties, so we recommend you choose your favorite. We used Vlassic spears for our recipe, so please keep in mind that you may need to adjust measurements based on the size of your pickles.
  • Pickle juice: Pickle juice is also added to the dressing to amp up the pickle flavor! The amount of pickles and pickle juice can be adjusted to your liking in this recipe. Add more if you want a stronger dill pickle flavor, or start with a little less if you want a milder flavor.

Make-Ahead Tip

Boil your potatoes and eggs the night before you plan to make this potato salad, and keep them in the fridge. This allows the recipe to come together much faster. 

Can You Freeze Potato Salad?

Technically, the answer is yes. You can store dill pickle potato salad in a zip-top bag for up to three months.

Do we recommend it? No. It’s just one of those recipes that doesn’t maintain its peak flavor or texture after freezing.

Ingredients

  • 3 lb. Yukon Gold potatoes

  • 5 large hard-boiled eggs

  • 2 stalks celery, finely chopped

  • 1/4 cup finely chopped white or red onion

  • 1 cup mayonnaise

  • 1 1/2 Tbsp. Durkee Famous Sauce

  • 1/2 tsp. yellow mustard

  • 4-5 chopped (about 3/4 cup) dill pickle spears, (such as Vlassic)

  • 3-4 Tbsp. pickle juice

  • 1/2 tsp. paprika

  • Chopped fresh dill, for garnish

Directions

  1. Cook the potatoes:

    Peel the potatoes. Place in a large pot and add cold water to cover by 1 inch. Bring to a boil; reduce heat and simmer until just tender when pierced by a fork. Drain and set aside to cool. When cooled, cut into 1-inch pieces.

  2. Prepare eggs:

    Separate the boiled egg yolks from the whites of the boiled eggs, setting the yolks aside. Chop the whites into small pieces.

  3. Make the sauce:

    Whisk together the egg yolks, mayonnaise, Durkee Famous Sauce, yellow mustard, pickle juice, and paprika in a small bowl until fully combined.

  4. In a large bowl, combine the potatoes, egg whites, celery, onion, and pickles.

  5. Stir together the potato salad:

    Pour the dressing over the potato mixture and fold together until combined.

    Be careful not to overmix; you don't want to break up the potatoes too much.

  6. Garnish and serve:

    Garnish with fresh dill and extra chopped pickles, if you like.

    To store, refrigerate in an airtight container for 4-5 days.
