This simple recipe solves the dryness issue that plagues many cornbread recipes by combining the best of cornbread with the moisture of a creamed corn casserole, all with a little added kick of green chiles. 

Perfect as an easy side, cornbread casserole is on the table quickly. It starts with a box of Jiffy cornbread mix. Then canned corn, sour cream, milk, and eggs are added for moisture and flavor. It's all mixed in one bowl, bakes in one pan, and will disappear in one minute at the table.

Ingredients for Cornbread Casserole

Not only is cornbread casserole easy to make, the ingredient list isn't long, and none of the ingredients are difficult to find. Here's what you'll need:

  • Corn muffin mix: This recipe was designed for a box of Jiffy cornbread mix, a staple of Southern cooking.
  • Canned corn: You'll need a can of whole kernel corn and a can of creamed corn. The creamed corn provides moisture and sweetness, while the whole corn adds texture and pops of corn to each bite.
  • Salted butter: If you're using unsalted butter, consider adding a sprinkle of salt to the casserole batter to even out the sweetness of the corn.
  • Eggs: You'll need 2. They help hold the casserole together into a scoopable side.
  • Sour cream and milk: Sour cream adds richness and tang. Milk makes the batter moist enough to spread.
  • Green chiles: These are optional, but they provide a subtle hint of heat to the casserole.

Tips for the Best Cornbread Casserole

Cornbread casserole couldn't be easier to make. You combine all the ingredients, stir until mixed, then scoop them into a baking dish. Bake until golden brown, and this side dish is ready for hungry crowds. But even dishes as simple as this one can be improved with a few tips:

  • Don't overmix: Stir the ingredients until just combined. If you mix too much, the final casserole could be dry and stiff.
  • Taste before seasoning: We're not going to debate the need for sugar (or not) in cornbread on this recipe page, but if you like a sweeter cornbread, you may want a sweeter cornbread casserole. The creamed corn will add a subtle sweetness, but if like extra sweetness, consider adding 2 teaspoons more sugar to the mix.
  • Watch the clock: Cornbread casserole should bake until golden brown and a pick inserted in the middle comes out clean. But you don't want to overbake the casserole as it could become very dry.

How To Store Cornbread Casserole 

Cornbread casserole can be stored in the fridge well-covered in foil or stored in airtight containers in individual pieces for up to three days. Reheat in the microwave or oven until warmed through.

What To Serve With Cornbread Casserole

Cornbread casserole is at home on the Thanksgiving table, the weeknight dinner table, or the Church potluck table. It is excellent alongside your favorite turkey recipes and holiday sides, like green bean casserole and sweet potato casserole.

Ingredients

  • 1 (8.5 oz.) box cornbread or corn muffin mix (such as Jiffy)

  • 1 (14.75 or 15 oz.) can whole kernel corn, rinsed and drained

  • 1 (14.75 or 15 oz.) can creamed corn, undrained

  • 1/4 cup (2 oz.) salted butter, melted, plus more for greasing casserole dish 

  • 2 large eggs

  • 3 Tbsp. sour cream

  • 3 Tbsp. milk

  • 1 (4 oz.) can chopped green chiles

Directions

  1. Prepare oven and baking dish:

    Preheat oven to 350°F. Grease a 13- x 9-inch baking dish with butter.

  2. Mix ingredients:

    In a large bowl, stir together cornbread mix, whole kernel corn, creamed corn, butter, eggs, sour cream, milk, and chopped green chiles until just combined. Do not overmix.

  3. Add batter to baking dish:

    Pour cornbread mixture into prepared baking dish.

  4. Bake casserole:

    Bake 30 to 35 minutes, or until golden brown and a toothpick comes out clean.
