“Due to the high moisture content of goat cheese, the texture will be altered with freezing,” Edwards says.

Edwards explains that hard cheeses – think Parmesan and Cheddar – with lower moisture content tend to freeze best, while creamier cheeses, such as Brie and goat cheeses, should be bought and consumed fresh to maximize taste and texture.

If you’ve got more than half a log of fresh goat cheese and are determined to freeze it, Edwards says the best way to do it is to start with plastic wrap.

  1. Wrap the goat cheese in plastic wrap.
  2. Place the wrapped cheese in an airtight container. This helps to reduce the risk of freezer burn.

Goat cheese will last about 1 to 2 months in the freezer, and should be thawed under refrigeration when you're ready to use it.

“If you're determined to freeze goat cheese, you may want to consider using it in a dish where it will be cooked after thawing as the texture and flavor will not be as appealing,” Edwards says.
